I hope you enjoy eating these delicious creations as much as I enjoy making them!

Growing up in rural Northern Ireland, I didn't have a great deal of experience trying different types of cuisine until I turned 18, leaving my parents' home to work as an apprentice cook.  Things took off when I took a position as a Commis Chef at a small bistro in Dublin in the  Irish Republic. Here I was in control of the Pastry section and it sparked a complex fascination in all things sweet!

Over a decade later and I have honed my skills as a Patissier, working at some of the best restaurants and hotels that Britain and Ireland have to offer, besides travelling to France and the United States. My experience has included  four years in Cornwall and a 2 year stint with Clare Smyth at the 3 Michelin starred Restaurant Gordon Ramsay in Chelsea, and more recently Head of Pastry at the 5* Lainston House Hotel in Winchester.

I have decided to settle in Whitchurch, East Hampshire and have taken the opportunity to develop my own range of handmade chocolates and confectionery, drawing inspiration for flavour combinations by liaising with local suppliers and artisan producers in the area. Currently I use honey, organic fruit, liqueurs, and dairy from Hampshire.
